ROTI ( ADONAN DASAR )

ROTI





Bahan:
  • 700 gr terigu cakra
  • 300 gr terigu biasa
  • 200 gr gula pasir
  • 20 gr yeast / ragi instant
  • 20 gr garam
  • 50 gr susu bubuk
  • 2 butir telur
  • 500cc air matang
  • 100 gr mentega/ margarin
  • ISI: coklat (cooking coklat/meses), keju, sosis, kentang kukus (selera)
Cara Membuat:
  1. Campur terigu cakra , terigu biasa, yeast, gula, garam dan susu bubuk sampai rata.
  2. Masukkan telur dan campur sampai rata.
  3. Kemudian masukkan air dan aduk sampai rata pula.
  4. Keluarkan adonan dari wadah lalu digilas campur mentega/margarin sedikit demi sedikit.
  5. Gilas dan banting adonan sampai kalis.
  6. Bentuk adonan menjadi bulat lalu tutup dg lap dan diamkan sampai mengembang +/- 30menit.
  7. Setelah mengembang adonan ditonjok sampai gas terbuang , lalu bagi adonan menjadi 50-70gr.
  8. Fermentasi kan kembali selama +/- 30menit.
  9. Kemudian giling kembali masing-masing adonan tadi dan di isi sesuai selera dan dibentuk menurut selera. Letakkan diatas loyang yang terlebih dahulu telah dioles margarin tipis-tipis.
  10. Fermetasikan kembali selama 30menit. Lalu olesi dengan kuning telur sebelum dibakar selama 30menitan atau sampai warnanya kecoklatan.

MUFFINS..moist and delicious


makes 1dozen muffins



Ingredients:
1 pound (3 1/2 cups) unbleached all-purpose flour
4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon table salt
1 1/3 cup brown sugar/palm sugar (any)
5 ounces (10 tablespoons) canola oil + 04 tbsp unsalted butter, melted and let it cool.
1 cup whole milk,
1 cup creme fraiche or sour cream
2 large eggs
1 large egg yolk
How To Make:
In a large mixing bowl, sift together the flour, baking powder, baking soda, and salt; mix well. In a medium mixing bowl, whisk together the sugar, canola oil+melted butter, milk, creme fraiche or sour cream, eggs, and egg yolk until well combined.
Pour the wet ingredients into the dry, and fold gently with a rubber spatula just until the dry ingredients are mostly moistened (the batter will be lumpy)—there should still be quite a few streaks of dry flour.
Use an ice cream scoop if you have one with a "sweeper" in it; otherwise, use two spoons to spoon the batter into the muffin cups lightly oil , distributing all the batter evenly. Bake until the muffins are golden brown and spring back lightly when you press the middle, 30-35minutes in 350 degree F (175 degree C). Let the tin cool on the rack for 15-20minutes.
Store the muffins in the airtight container at room temperature.
PS: You may add chocolate choco-chips or cashew nuts for garnish.

Bagels

Wholemeal Bread


Ingredients:
(makes a 20cm round bread)


150g bread flour
150g wholemeal flour
1 teaspoon instant yeast
2 tablespoon sugar
1 teaspoon salt
10g butter
170ml water

Method:

  1. Place bread flour and wholemeal flour in a mixing bowl and stir with a whisk to combine. I did this by measuring both types of flour in a plastic bag and then give a few shakes to mix the flours.
  2. Place all ingredients (according to the sequence as stated in your bread machine manual) in the bread pan and set the machine to the Dough setting. You can either leave the dough to proof in the machine, or let it proof in room temperature. If you are proofing the dough in room temperature, place it in a big mixing bowl, and cover it with cling wrap. Let is rise till double in bulk, takes about 1 hour.
  3. Remove dough from bread machine/mixing bowl. Knock out the dough and give a few light kneading. Gently flatten the dough and shape into a smooth ball. Place dough on a baking sheet lined with parchment paper. Cover with a damp towel or plastic bag and let it proof for another 30mins. Note that this time round, instead of cling wrap, you should cover the dough with plastic bag, as the cling wrap may stick onto the dough and prevent it from rising properly.
  4. Preheat oven to 180 degC. Dust with some wholemeal flour and make 2 long slits on the dough with a sharp knife. Bake for 30mins until the crust turns golden brown. Remove from oven and let cool on a rack.
